Tuna Rockefeller



On a trip home from Houston, we stopped in Lafayette, LA for a few days. We ate a lot of wonderful food but the best was at a restaurant called "Prejeans". Visit Prejean's website here. We enjoyed alligator, crawfish and other delights and actually finished off Barb's crawfish the next day while visiting the Tabasco factory. I tasted a wonderful dish named "Tuna Rockefeller". This is not their dish but one by me, inspired by Prejeans. I see that they now have their version listed in the recipe section of the website. Hey Prejean's, thanks for sitting us next to the band. It was a fun evening and left us fond memories.

1 10oz container creamed spinach
1 lb tuna steaks (3/4" thick, cut into serving size pieces)
1/2 cup grated parmesean cheese
1/2 cup fresh bread crumbs
Emeril's Essence (CREOLE) Essence Recipe here
Tabasco sauce

Cook the spinach in the microwave for about 3/4ths the suggested time. It needs to be warm but not hot. Mix the spinach, bread crumbs, cheese and a few squirts of Tabasco in a bowl. Season the tuna steaks on both sides with Essence. Shake a few drops of Tabasco on each steak. Top each steak with some of the spinach mix. Bake in a 400 degree oven for about 20 minutes. This is one to write home about!
