Dave's DoorKnock Rice.

I was a big fan of the FoodTV Show "DoorKnock Dinners, where they come in the house and make a gourmet meal from what is in your refrigerator. It never looked to hard to me so I did the same thing in my own fridge. This rice is what came out of one of my attempts.

3 cups cooked rice.
1 cup frozen peas
1 red bell pepper, seeded and chopped.
1 cup chopped onions
olive oil
salt
pepper
cayenne pepper
dry or fresh parsley
1 cup pine nuts.

Cook the rice and set it aside, keep warm (I used leftovers and reheated it in the microwave.)

Heat the peas until hot but not overcooked. And add to the hot rice.

Saute the peppers and onions in some olive oil (2 tbl?) Season them with salt, pepper, cayenne and parsley. Add these to the rice mixture.

Using the same saute pan and barely any oil, toast the pine nuts until the are nicely browned. Add them to the rice mixture. If needed, re-heat the rice mixture temperature before serving. I gave mine a minute or two in the microwave, covering the bowl with plastic wrap. The onions and pepper provide flavor and the pine nuts give it crunch and a toasty flavor. Yum

My original recipe was for two people and was made mostly from leftovers. The rice, peas, pepper and onion were sitting in the fridge. Most of the amounts are guesses. I think that you can change it to fit what you have. The pine nuts are a staple in our house but used infrequently. I was luck to spot them. Barb loved this stuff and we will have to "plan" it in our menu.
