Ham Steak with Pineapple-Chipotle Salsa



A ham steak, some left-over fresh pineapple and an open can of chipotles inspired this one. The chipotles provide lots of heat in the salsa.

1 Ham steak
8oz Fresh or canned pineapple
3 Chipotle peppers in adobo sauce
1 oz Rum
1 oz Tequila
1/4 cup Light brown sugar
2-3 Green onions (scallions)

Chop pineapple, chipotles, and green onion and combine in a sauce pan with the rum, tequila and light brown sugar and simmer for 20-30 minutes. Grill or broil the ham steak and serve the salsa on top.
