Moravian Sugar Cake


Large recipe



This recipe came to us though one of the Moravian churches we attended years ago. We used it for fund raisers as it made seven sugar cakes. It is yeasty and delicious.

In a large tuperware cake saver bowl mix:
2 cups white sugar
2 tsp salt
2 cups hot mashed potatoes

Then add:
4 eggs, beaten
3 sticks melted margarine
3 pkg active dry yeast disolved in
2 cups warm potato water -- (105-110°F)
8 cups sifted all-purpose flour (if needed, add 1-1/2 heaping tablespoons more)

Cover and let rise to top of lid. Punch down dough and spread into:
7 greased and floured 8 inch pans
Let dough rise again until it's not sticky to the touch.
Sprinkle with brown sugar and cinnamon
Make holes in the top and fill with melted butter or margarine.
Bake at 350°F for 20-25 minutes, checking frequently.

We would make these in several batches and freeze them to use during special fund raising events. At our church, we often serve this for Lovefeasts and other celebrations. At our previous church we used it as a gift to new people in the neighborhood as a way of welcoming them to the area and inviting them to church. At home, we normally have it at Christmas.
